Blueberry Protein Pancakes

No Flour Required - here's the recipe:
6 egg whites
1/2 cup oats
1 tsp cinnamon
1/2 cup unsweetened almond milk
1/4 cup blueberries
Simply mix in the blender the egg whites, milk, oats and cinnamon. Spray frying pan with a little cooking spray and get the pan piping hot Pour half liquid into pan. Sprinkle half the blueberries on top and leave for 1-2 minutes before flipping over for another 1-2 minutes before serving. Makes 2 large pancakes or 4 smaller ones.
If you wish a higher protein content, simply add 1 scoop of protein powder to the pancake mix!
Serving suggestions: Serve with lemon juice, more fruit, honey or even frozen yoghurt, the choice is endless. Enjoy!
