Recipe Time
To kick start a healthy New Year, herewith one of my firm favourites - Chocolate Protein Brownies!
As always, tried and tested many times, until perfected. If you love chocolate and want a healthy alternative, this
recipe is amazing. I challenge you NOT to eat them all in one day!
Protein powder - choose a good quality powder. 1 scoop equates to approximately 30g. Hence, if you have 15g them double up the scoops. You can find many different flavours to experiment with. I love the chocolate mint.
You can also incorporate black cocoa and/or double dutch cocoa for that even richer chocolate taste. I've experimented with all and they taste great. Simply incorporate within the 1/2 cup measure.
1 1/2 cups unsweetened almond milk
15 medjool dates (stones removed)
4 scoops whey protein (1 scoop = 30g)
1/2 cup cacao powder
1/2 cup coconut flour
1 cup liquid egg whites
1 tsp baking powder
1/2 cup walnuts
Mix all the ingredients in a blender, leaving the walnuts to fold in afterwards. Line a baking tray and pour the mixture in, spreading evenly. Or simply use a non-stick deep baking tray. Making sure it is a deep tray, noticing the height you will get from the brownies, picture above. I yielded 42 squares from this recipe. Enjoy! xxx
Bake in the oven for 40 minutes @ 160 degrees
