Spicy Coconut Chicken Curry
Recipe time again, and this one is a firm favourite in my household at dinner time - Spicy Coconut Chicken Curry.
Who doesn't love a good curry. What I love about this recipe is that you can decide how much spice you want to add. So use this recipe as your starting point and tweak to your personal taste. The added benefits of curry is that some say it helps to control your blood sugar levels and turmeric is an anti-inflammatory. And its great for clearing those sinuses.
Here's my ingredients:-
1 lb chicken breast
½ cup sliced red onion
¾ cup coconut milk (I use alpro unsweetened)
½ cup chicken broth (fresh is better)
1 tbsp each of garlic & ginger paste
Spices Ingredients
1 tbsp curry powder
½ tbsp turmeric
½ tbsp paprika
½ tbsp cayenne pepper
salt and pepper to taste
Cut the chicken breasts into small pieces. Put in a frying pan on a medium heat and cook the chicken. Spray the pan with a light oil, if need be. Do not worry about seasoning—that part comes later.
In a separate - medium heat - saucepan, add the red onion, garlic, and ginger and fry. Then add chicken broth, coconut milk, and spices. Stir and then let the sauce simmer and then cover. Reduce to low heat to allow the sauce to cook and thicken (approx. 5-10 mins). Then add the cooked chicken. Stir and cook covered for another 5 minutes on a low heat. Add salt and pepper for further taste.
Remove the saucepan from the heat and allow the sauce to thicken a little more and then serve with your favourite rice! Enjoy xxxx
